Recipe: Rice Muffins #2

These are the rice muffins that I actually made tonight. They were so delicious that they tasted like almond cookies.

Ingredients:
1 cup brown rice flour
1 cup almond flour meal
1 teaspoon baking powder
2 tablespoons sugar
1 egg
1 tablespoon almond oil
1 1/2 cups rice milk

Directions:
Preheat oven to 350 degrees F. Mix dry ingredients. Add egg, oil and rice milk and mix until just combined. Fill paper-lined muffin tin 3/4 full. Bake 25-28 minutes.

Alternative: instead of baking in muffin tins, we used our GT Express 101 machine. They stuck to the surface a bit and didn't brown on top, but were almost like a shortbread muffin. Made 7 "muffins". HOWEVER, we do NOT really recommend you buying this machine since there are so many problems... sticking, burning, etc. Since ours seems to work somewhat ok most of the time, we'll probably mention it with other recipes too.

Variation: Next time, we're adding a touch of cinnamon or chocolate chips.

NOTE: Both Hubby and Son loved these, as did I. Son wanted a bit of honey on his, and was disappointed when we ran out of batter (although he ate too). Hubby ate three, and I ate two. Next time, we'll need to make a double batch. Jan 2 2009 7:26 p.m.

Recipe: Chicken and Rice-Noodle Soup

This is a take on regular chicken noodle soup, but it uses rice noodles. Rice noodles are gluten-free and come in many shapes, including little cars, macaroni, and penne. They also store well.

Ingredients:
2 5-ounce cans chunk chicken in water
2 14-ounce cans chicken broth (or about 4 cups made from boullion)
1/4 cup dried vegetables (mixed: carrots, spinach, celery)
2 tablespoons dried onion dices
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
salt/pepper to taste
1 1/2 cup rice noodles

Directions:
Combine all ingredients in large pot and simmer for 20 minutes. Add rice noodles (and more broth if needed) and simmer for another 10 minutes, or until noodles are cooked through.

OR - cook in crockpot for 4-6 hours, and add the rice noodles about 15 minutes before serving.

Very healthy, and lactose-free/gluten-free.

Update 1/2/09 at 7:13 p.m.: Hubby raved about this soup, calling it "absolutely delicious". Although he likes and/or tolerates my cooking and experiments, this was the first dish he went ga-ga over. Son said he would prefer it be made with no veggies except a couple bits of carrots, and wanted rice spaghetti-shaped (long-skinny) noodles so it would look more like his favorite canned chicken soup.

Menu: Rice (crackers, muffins)

Day 2: Rice

As you know, today is the 2nd day of our Grain Rotation Diet (to discovered food allergies, and to make sure we can provide healthy varieties if we get snowed in or some other disaster prevents us from getting out and about). We're also attempting to use only foods we've stored for emergency-prep (pantry, frozen, dried), or that we've grown on our windowsill (and later, in our garden).

Yesterday's Black Eyed Pea Soup with Ham was very yummy! There was enough to put in the freezer for Hubby's lunch box on the next CORN day.

So...Today is Friday, here's our family's menu for today, which focuses on Rice:

Breakfast:
Rice cakes with peanut butter & flax/sesame seeds

Lunch:
rice crackers
dried fruit (or an apple or pear)
tuna salad

Dinner:
cooked rice with honey
...OR...
brown rice muffins*
chicken and rice-noodle soup*

Snack:
nuts and seeds
